My name is Tommy, I live in South West Florida (Naples,) so I'm blessed to be able to cook outdoors all year long. I have been grilling for 15 years or so, but just now getting interested in smoking. I have a charcoal-based 2-in-1 that allows for me to do both. I have loads of wood available, living so close to the Everglades, I am really curious about exploring what that may have to offer. I smoked a brined turkey for Thanksgiving (completely on a whim) that turned out great. So, I'm really stoked on this process. Any help with woods, equipment, easier things to get started would be great. Just got into brining as well. Thanks for y'all's help!
