Found this forum by accident - and then spent the next two days reading - what an awesome forum this is.

I'm from New Zealand, and (like our Australian cousins) are known for our BBQ's.  Sadly this is a false image that we portray to the world.

I work a lot in the US (Southern US for the main part), and when there discovered 'real BBQ'ing / smoking / low & slow) - and I was hooked.

I love it, you guys pi$$ all over us when it comes to cooking.  We throw on some steak, or fish / chicken and as long as we are outside and have a beer in hand call it BBQ'ing.

Low slow cooks / smokes - they just dont happen.

Until now.  I got me a Big Green Egg (there are only a few over here - as you can imaging they are not cheap to post), and am spreading the word of 'proper BBQ'ing to all I meet.

It has given me passion back again into cooking outdoors - and I love it.

Ive subscribed to the 5 day e course and am enjoying that.  

I look forward to learning a bit - and once this bl00dy winter is past us (windy and cold as anything - and just to unpleasant to be out doors) contributing some q-views of some of our local meats / fish to you guys - hopefully you will find that interesting.

We have the Rugby World cup down here in 58 days - so having plenty of parties / game days at my home over that period (Go All Blacks!!!!!) - so I have to get some practice cooks in.

I read about the "Fatties" - they look so good, they have to be wrong.  Im planning on cooking a couple this coming weekend as my first cook off this forum.

I have the name Kiwi Redneck - given that I should have been born in the South of the US.  I love the food (not grits tho' - they taste arse), shooting, have a 4x4 and Im missing a few teeth (ok - I make that last bit up).  Actually I love the southern 'feel' - I always have a good time when I am there and have made a lot of friends.  Heck - I even tailgate at FSU

I just read your message on the forum & agree with most of the sentiments you elaborate. However, I cannot help but to remind everyone that a Kiwi Hangi is one of THE Best meals
