Curing a new WSM

    Need some advice. Pretty new to smoking. Built a Mini WSM this past summer and did a burn in to cure it. My local Fleet Farm had a in store sale on WSM's so I picked one up, all assembled and ready to go. I've done some research here, U-Tube and Many just fire the smoker up and do a first cook. I'm thinking I should do a good six hour burn to cure the unit.

    What do you guys think ?     Thanks
  2. Congratulations on your new smoker. I would do a couple of hours of 350° or so to burn off all of the manufacturing crap. During that time play with it and learn to control the temp.

    Congrats on that new WSM Dave! As charcoal rigs go they're one of the best! Agree with David...I'd run it empty a couple hours to burn out any factory oil/garbage. Lots of people will then spray a light coat of veg oil or cooking spray to inner surfaces and run it empty for another hour or 2, but cooking some meat with some fat on it will accomplish the same thing.
