New here as well and new to smoking. I'm in the market for medium trailer mounted smoker that I use to enhance my business. My questions to the group is that being in Colorado do I need to be aware of any issues? I have been told that a regular smoker with the fire box built on the bottom will not work as well as one that is built for Colorado's unique climate.

I live in Littleton and smoke with an R2D2 so I can't give much advice on the side box issue. I just deal with the temp issues but it all works.

Welcome to the SMF!! Not sure why the climate is a factor....unless your going to be outside in the dead of winter, then I don't think it matters where your firebox is. Maybe you could clarify a little.
 
Welcome to the forum. I live in Littleton too and have had a SFB up here. I didn't notice too much of a difference from smoking in West Texas, except getting decent wood. You do have to keep in mind we have a bit of a shortage on one of the 3 components of fire. Oxygen! The way to counter that is to make sure your smoker flows air. Most sidebox configurations are pretty straight forward. Vent on the firebox, and a vent on the flue. This also controls the temps more or less. This is basic fire tending 101 though. As I said before, I didn't notice a big difference except I had to keep the dampers open a little more to get the airflow higher.

I've been competiting for the last 3 years with my Treager 75 and Country Smoker with no problems. I also do catering and my health department inspector gave me the thumbs up on the 75 and the whole hog so I'm good. Only time Ihave noticed a big diffrence has been when cooking in the mountains, takes a little more time, but I also use a blanket to help keep the heat in.Hope this helps.
