Meat:      Pork loin, 2.6 lbs cut in a flat sheet

Stuffing:  cherry preserves, craisins, sautéed diced celery & onion, Stove Top Sage stuffing mix, fine bread crumbs

Wood:     Cherry (about 3 hrs of smoke)

    Smoker:  MES 30 (240F for about 4.5 hours, I.T. about 157)

Cooked the celery and onion in a little oil. Salt / Pepper the loin after cutting it into a sheet. Spread out the cherries, veges, stuffing on the pork loin. Rolled and tied it up. Put some of Jeff's rub on the outside.

Finished product. It came out ok. A little on the 'wet' side even with all the bread stuffing and crumbs. Next time around I will used dried cherries. With them the flavor might also be more (or so I hear).

Looks great! If I may suggest pounding the meat with a mallet can tenderize but more importantly get a even thickness for rolling.

  6. Very nice job!

I've used prunes and apricots in pork smokes before.

    Always with good results.

Can't wait to try cherry!  BOBBYQ

Ok, that cuts it! I'm going to have to try rolling a loin!

  8. Just for giggles, I have soaked raisins in rum overnight.

Some folks might not enjoy a moist center to their pork loin.

I thought it was great!  BOBBYQ

I just saw my next smoke. Very nice!

  10. I did one stuffed with a cranberry/tangerine relish a bunch of years ago. It turned out great...

I also stuffed one with cherries (dried cherries rehydrated in wine), but didn't smoke that one...

I used to do a lot of stuffed pork loins when I was cooking for ten. My favorite was stuffed with kimchi...

I'm gonna try one tomorrow.. Will take pics. I think some mushrooms and onion sauteed and a bit of goat cheese and some kind of herb.. rosemary perhaps.. or thyme.. I hope it turns out ok. Never smoked a stuffed loin lol. 145° I.T. I guess.. Maybe a little salt n pepper outside..

Prunes and apricots sound good. I have some semi-dried frozen ones from Trader Joes that might work.

Great idea about the cherries & wine rehydrate.
