best chicken ever

Cape cod Ma.
I tried smoking an 8 pound chicken today in my new smoke vault.I got a late start on it so I decided to cut out the backbone and butterfly it. Then peel back the skin to apply my rub on the meat then roll it back to season the top. I put the chicken on the center rack in the smoke vault and smoked it using a combination of apple and hickory chips at 300 degrees.2 1/2 hours later I took it out at a temp of 175.I have to say and my family agrees it was some of the best chicken we ever ate.
 
I was told once no pics and it didn't happen. But great job and I too love smoked chicken. Next time try two leftovers and smoked chicken salad rock.

Now you know if theres no Qview it didn't happen, But it does sound good thou.

For those of you that haven't tried spatching a bird...you are missing out.

My only other advice is to brine that sucker overnight in a little sugar water combined with your favorite rub (plain salt works fine, too).
 
Nice to read that someone has spatchcocked a bird and really enjoyed the benefits in smoking time. Congrats and making everyone happy with that big chick.
