Seasoned meatballs wrapped in bacon basted with a tangy BBQ sauce and hot sausage wrapped in bacon basted with honey mustard sauce. Both smoked with pecan.
I started slow at 180° for the first 2 1/2 hrs with constant smoke. Then ramped up to 205° with a light smoke,basted them 2 times at 20min intervals and pulled them at 150° internal temp. EPIC!!!
