3-pepper rubbed beef fajitas w/Q

Landed a skirt steak on sale, which means fajitas in my house. I wanted to try some of the peppers I've been getting in a rub. I had chipotles, guajillos and some little hot red peppers a friend brought back from Italy. All needed some more drying so I put them in the smoker at a low temp with no wood...



All dried and powdered...I added some onion powder, garlic powder and brown sugar...



The steak was marinaded in mojo overnight. I only rubbed one piece with the three-pepper rub because the rest of the family can't take the heat.



Smoked for a little more than an hour over pecan, then onto the grill for a sear (the orange on the meat is cheddar that dripped out of my ABTs)...



Then onto a tortilla with some (OK, lots) homemade guac and sauteed onions and bell peppers - delicious!

Man that looks good and all but could you even taste the meat thur that pepper rub it looks alot heavy to me. But then I cann't take the hot like I used too. But now the rest of the meals looks good I like the homemade guac with the red peppers and onions.
 
Meatball, that was a great dinner you made, and what a nice trio of spices. Love "falda" meat but it's impossibly expensive around here. Excellent liberal use of the guacamole on the fajita, bud!

Actually, it really wasn't that hot. Had a great flavor and I even got the wife to try some, and she has major adverse reactions to too much heat!

Yeah, next time I'll do more steak with the pepper rub - this was just experimental the first time around.

Usually expensive meat around here too, so we always snatch it when we notice a sale. Liberal use is the only way to go with my wife's guac my friend!
