Landed a skirt steak on sale, which means fajitas in my house. I wanted to try some of the peppers I've been getting in a rub. I had chipotles, guajillos and some little hot red peppers a friend brought back from Italy. All needed some more drying so I put them in the smoker at a low temp with no wood... All dried and powdered...I added some onion powder, garlic powder and brown sugar... The steak was marinaded in mojo overnight. I only rubbed one piece with the three-pepper rub because the rest of the family can't take the heat. Smoked for a little more than an hour over pecan, then onto the grill for a sear (the orange on the meat is cheddar that dripped out of my ABTs)... Then onto a tortilla with some (OK, lots) homemade guac and sauteed onions and bell peppers - delicious! Thanks for checking them out!
