I drool at the memories...

These two beaut's were the most succulent pieces of meat I've ever smoked. They also caused me the most trouble! After 14 hours they were just around 155*. There was a nice wind that decided to swing in as soon as I went to take a nap which lasted a little over 4 hours (it was supposed to last 45 minutes) and when I finally DID wake up, I promptly got on my knees and said a quick THANKS, as my pops let me use his electric element!

I could have lost my 85 cents per pound investment, and a chunk of my pride, BUT..I didn't. I gave up on letting them finish in the ECB and moved them to the oven where I could finally nap in the recliner with the thermo alarm to wake me up..

For my brother's b-day, I decided to go with his favorite seasoning..Tony Chachere's Creole. I also used a Praline Ham injection which was, to say the least..absolute heaven!



Smoked for 14 hours with hickory chunks, this is pre-foil, pre-oven.



To wrap it up...I mean, to foil..oops, maybe I mean to end this post. . . When I finally had a chance to taste this porkoliciousness, I was more intent on eating than snapping pics. Sorry guys! This is as far as you get to travel!
