Weekend FOTB ribs

Was making some ribs this weekend and the wife wanted them FOTB style. I watched Malcolm Reed's FOTB rib method and decided that I was going to use his approach. I got a package of St. Louis cut spareribs from Costco. I made up a batch of homemade BBQ sauce which turned out pretty well. A bit too vinegary for me so I may add more sugar or less vinegar next go around. I added apple juice to the sauce for the flavor and sweetness. May try FCAJ next time I make this sauce. Ribs were rubbed with a simple salt, pepper and garlic powder rub first then I put some Blues Hog original and some Fleet Farm Backyard BBQ rub on the ribs. Ran the ribs for 3 hours at 260F with apple wood for smoke then wrapped with brown sugar, butter and some BBQ sauce I had that I needed to use up. Left those in the smoker for 2 hours. They were FOTB after this but I needed to sauce them so I unwrapped them and put them back in the smoker and sauced them and left them in for another 10 minutes. The ribs turned out great. Wife said they were the best I have made. I also thought they were really good. Had a great crust and the sauce really worked well. The apple wood smoke really worked well on these ribs. Please excuse the last picture. I was so eager to taste the ribs after coking that I pulled almost a full rack off them and onto plates before I got a picture.

More accurately, fix what your wife likes.
I prefer competition style ribs that you can get a good bite out of. But if someone else is cooking and has FOTB to offer me I sure ain't gonna turn em down.
 
I can't even blame you for taking some for a plate before snapping the pic. With it looking like that, I would have inhaled them before I the thought would have even crossed my mind! FOTB ribs are nice once in awhile, I need to change it up otherwise I just get bored and avoid it for awhile. And if the wifey likes it and is happy, so are you!

Right on Jeff, glad you're using your smoker, I love that thing.
I just painted my new offset smoker yesterday, and cured the paint and seasoned the inside. I'm not sure what I will smoke first in it, it seems to maintain temps super easy. Thank god. :emoji_laughing:

I love my Stump's Baby. One of the best purchases I have made. Works great in the cold Wisconsin weather. :emoji_blush:
