So I was given some country style pork loin ribs... They are really just pork loin sliced into rib shapes/pieces.. They were really lean (no fat) and I was worried about drying out doing vortex style... I rubbed them up with some of

Here they are all rubbed up..
So on the Weber they go with the votex set up... A couple of Pecan chunks for smoke
Turned the lid a quarter of a turn every 15 minutes... Flipped the ribs over after 30 minutes... Sauced half of them at the 50 minute mark... Finished at the 1 hour mark
Time to eat and see what the results were.. Mrs. Danls made up some macaroni salad
And the Money Shot... YES... That is our Sunday Best china as well...
I was pleasantly suprised that they weren't like shoe leather... But they weren't super moist either...
The Tatonka Dust is nothing but amazing... The macaroni salad was delicious as well (as usual) ...
