Venison, beef and a bit of pork is the mix. High Country SS mix and Red Bologna from Owens BBQ. Collegen middles are the small casings and fibrous for the bigger one. Smoked with cob pellets.

Those look awesome. Can you give some more step by step detail of you mixture, smoke temp, and durations? I am very interested in making some snack sticks now that I have done the mailbox mod and also put a ball valve to further regulate the gas flow in my propane smoker. I can hold 80-100F with no problem.
 
1/3rd pork to venison. I had 33 lbs venison, I added a 11 lb pork loin to it.

That's the meat in a SS bowl. Hard to tell from the reflection in the bowl.
