I'm just now cutting my teeth on making sourdough bread. Throwing away starter discard really bothers me for some reason. I've made brownies and have a great waffle recipe I've been using. These cinnamon rolls are a keeper. A bit of work, but tasty and uses 100 grams of discard. Lots of other recipes to try. I snapped this pic so I thought I would share, I know Fueling Around posted some a couple months ago.
The dough recipe is not super sweet. It could be made without the glaze and eat just fine for those who prefer less sweet.
