Was checking the meat on sale at schnucks Saturday night and they had whole pork loin on sale for $1.69lb. Took the whole loin and cut off some thick chops. Browned them down in some oil.
Cooked them long enough to brown them and get that good meaty bits flavor in the pan.
Removed the chops and added flour in to make a light roux. Forgot to take a picture of the roux. Next step was to add in the Cajun trinity (celery, bell pepper, onion) and added some seasoning. I like the Cajun 2 step seasoning.
Cooked them long enough veggies down till they were soft and tossed the loin chops back in.
Added the ole chicken juice and let it simmer for about 2 hours.
So tender you can cut them with a fork and man oh man they were delicious. Made some Yukon gold mashed potatoes to go with the chops and gravy. Kinda funny watching your family lick the plate clean.
