Great looking burgers, Keith. Very nice job, and those buns look marvelous.

Personally, I'm not much of a fan of smash burgers, but an Oklahoma onion burger would be the exception.

Your thread reminds me of a time many years ago when I was in Oklahoma City evaluating a company a client of mine was considering buying. On the last day of my visit we finished up early and I had about 5 hours to kill before my flight. One of the locals, who was tasked with being my escort, decided to give me a tour of the area and stop somewhere for a bite to eat. We ended up in a little town known as El Reno, OK and pulled up in front of a small place known as "Sid's Diner" where the onion burger was the specialty of the house. They were fantastic, and I ended up eating 3 of them.

I closely watched what the cook was doing when he was making the burgers, and tried to do them at home, but they were a poor substitute for Sid's. I concluded what I was missing was a decades old greasy well seasoned griddle.

A few years later I ran across an article about Sid's in Saveur along with the original recipe.

Thanks for posting that dls1 dls1 ! Great read! Funny though, George Motz is the guy in the youtube video I watched make the burgers....

With the smell of caramelized onion thick though the house....I had to make another one!!! LOL!!! No lunch today, so I was still hungry....man is this a great burger! (I took some pics. this time...)

Very nice. I made smash burgers yesterday.

One of my favorites on my Blackstone.

I made some of my baked potato hash browns to go along with the burgers.
