I just realized that I had not posted this cook......
I even asked questions to other members and told them I was posting soon...
Woops....
The question I had was about onion.
I had already put the meatloaf on the smoker when I realized the onion might not get soft.

The onions were perfect and the family enjoyed it.
Anyhow it turned out awesome and wanted to share.
I mixed 3lbs of ground beef with the "kitchen sink".
We had no crackers so I tried potato buds for some binder...
Mixed in some chipotle cheddar.....
Brisket rub, nutmeg, garlic, coarse salt, pepper...
Fine chopped onion....
3 eggs....
I believe that's it...

These choppers are awesome and very handy!!
I put it in the Rec Tec at 225 and took it to an IT of right around 165. My smoking Buddy!
I added a thin coat of bbq sauce the last half hour.
This was really, really good!
