I checked the temperature in 5 locations in my MES 30" and this id the results. Keep in mind that even in your kitchen oven, you can get temperature swings of 35 to 40 degrees.

The temperatures were taken using a Thermoworks Smoke with air temperature probe.

Some structure for my testing were to have the chip, water bowl and an aluminum drip tray in for most of the testing. The vent was wide open.

The temperature swings were taken after after the third cycle so it had some time to settle down.

The first temps are the unit coming up to temperature. During this entire test, the outside temperature was ranged from 54 to 58 degrees.

The MES set temperature was 275*

This shows the location of the probe as the unit came up to temperature. After cycling thru a few times the swing was documented.

After stabilizing, the temperature swing was 276* to 283*

The second temperature test was with the probe in the top right rear corner.

After the door was closed and the temperature had dropped to 210*, the temperature rose to 322*

After stabilizing, the temperature swing was 291* to 295*

Note: The MES digital readout showed a temperature swing from 272* to 279*
