I am looking for a pork chop wet-brine recipe. I got this (below) from ChatGPT. I am hoping somebody has something better...but this looks pretty good!
  • 4 cups cold water
  • 1/4 cup salt (kosher or sea salt)
  • 1/4 cup brown sugar
  • 2 cloves garlic, smashed
  • 1 teaspoon whole black peppercorns
  • 1 bay leaf
  • Optional: herbs like thyme or rosemary

 
This is the brine we use for pork butts. It originally came from Alton Brown and can be scaled down. Nice thing is it's simple and you can add about anything to it. For pork, garlic and a small amount of rosemary (powerful) come to mind along with some oregano but frankly I would apply other seasonings directly to the meat and just keep the brine simple.

- 8 ounces molasses, grandma's brand
- 2/3 cup pickling salt, use only 1/2 cup if meat is "moisture enhanced"
- 2 quarts water
