This is less about sausage and more of an offshoot of the leftovers. I finished cutting 30 pounds of pork butts for the grinder and found myself trying to come up with something to do with the bones when the memory of my old Danish Great Grandmother rose up. I'm kind of lazy and I didn't want to work that hard getting the meat off the bones so I put them in a pot and covered them in water and simmered for an hour and a half. I took the bones out and stripped the meat. I reduced the liquid to about 2 cups and added ginger, cloves, nutmeg, allspice and salt and pepper. Cooled it a bit and added a packet of Know gelatin. Poured it over the meat in a loaf pan and the next day Hey Presto! Headless Head Cheese! Fantastic if I do say so myself. My G.G. would love it.
 
Usually when I make it I'll use the heads from pig roasts but SWMBO won't touch that. This lets me make something I really like and lets me be lazy at the same time.

We used to butcher pigs, beef and chickens. We made everything.
 
Looks awesome. I do the same, but under a different name: terrine. Works with everything: skin, bones, leftover meat.

Use a pressure cooker. Saves time.

If you use bones you shouldn't need gelatin if liquid is reduced.
 
I didn't need the gelatin I just prefer a very firm texture. There have been horrible sandwich tragedies in the past. Meat and mustard everywhere. OH! The humanity!
 
Looks good and I love a great Head Cheese. My Wife is like many Americans, a savory firm gelatin loaded with meat is nasty! She will eat Gummy Bears, the rubbery Jello Jigglers, even Jello with Canned Fruit Cocktail (Yuk!) but forget even a Terrine made with chunks of Pork Butt and Totally Grossed Out by the tiny bit of Gelatin in a can of Spam! Silly Girl, more for me....JJ
