Curious if anyone has tried cured spare ribs?...I've been experimenting a bit and cured these spares, rubbed w/ black pepper and coriander and then smoked them like I would normally smoke. For the last few hours or so, I added an oyster/honey/garlic sauce that I make for wings and sprinkled with sesame seeds.
Kind of a bit of mad scientist stuff....but, they turned out pretty good. Tender...like ham.
Wondering if anyone has done this...have any tips for how to best smoke them after curing...different from regular spare ribs.
I think I would skip the coriander and just use black pepper w/onion/garlic powder next time. No need for salt in the rub since the ribs are cured and salty.
