Cold smoking @ 250*F

It was cold outside yesterday! 17* when I started, 9* when I finished plus a couple inches of snow! Did two 5lb. butts yesterday for dinner tonight. One I took to 185* for slicing and the other to 205* for some pulled pork. Both were rubbed down with Memphis Dust. Even though they were very close in weight, they did not cook the same. The one I took off for slicing I should have kept on for pulled. It got to 185* in less than 5hrs. The other was at 170*. Total of 11 hrs and 15 min to get to 205*. No pics of the sliced one but it was tasty. I did make some of Chef JJ’s finishing sauce for the pulled pork... great stuff.
 
Forgot to say I used oak for the wood. Since it was pretty cold I ended up using about 20lbs of KBB as well.
 
I can't believe you guys smoke meat in that kind of weather.
I wouldn't even go outside!

That is not an electric smoker? That took ALOT of effort to accomplish that if not. Looks great, amazing!
Nope not electric,WSM. Not really too much effort either just a lot of time. Appreciate the compliment, everyone loved it.

Thanks Al! Lol, once everything goes numb from being so cold it’s not that bad. I did have to shovel the snow off the patio twice though. Once before I started and got a couple inches of snow during the smoke too.
