Here's the little fella getting ready for some seasoning
Rubbed with some A1 steak sauce, sprinkled with SPOG and wrapped ready for the fridge.
Sorry I didn't get many photo's of the actual smoke....(running late)...24 hours later I tied it and fired up the MES30 with Mesquite...set up the iGrill and went for it.
I pulled it at IT 120F, foiled, towelled and into the cooler while I went about JimmyJ's Au Jus and baked some potato and butternut.
And the money shot......I couldn't be happier when I sliced into it.
Sorry again for not getting a plated shot...
The PR was super moist and tender...nice smokey flavor to it and the Au Jus...There's even some left for sammies this week. I'm very happy with this result. I'm not sure if I could do it any better. Just hope I can replicate it in the future.
