Ten days ago i rubbed some Hi Mountain buckboard bacon cure into some split butts. Today I rinsed, soaked and went to dry them when I noticed some very yellow streaks on some of the meat. Anybody got any ideas? I'm thinking better safe than sorry. I've made this before with good results but without yellow streaks. TIA

Steve sorry I can't help you, I've used Hi Mountain cures a lot. Never had any yellow streaks. The first butt I did had a lot of gray ares's in it. I paniced askes a few questions, got a few answers, some of them said it could have been a reaction to the cure. Smoke it, ate it, loved it!!! Maybe some one will help you out also.
