Hey everyone, new to the site, lots of good information here. I built a UDS, (actually two..one will be a Christmas gift) and am smoking my first pork shoulder as we speak.
Here's the trial run (no meat) to see how it performed with lump...
Temp was all over, so I opened all the vents and had it roaring over 400 degrees to burn out any residual stuff inside.
Next I tried Stubb's briquetts...
Held this temp for 8 hours with about 10 lbs of bricks. I figured that was pretty good, so I'm attempting my first shoulder...
Ready to go on the UDS...
Waiting for temp to hit 195 when I'll remove it and let it rest... it's starting to snow, so we'll see how it turns out!
