Cuban Roll - Looking for the Perfect One

Not pleased with the recipe I have, so tried a new one from ChainBaker.
I like the way he writes up his recipes. Also has videos of the process.

This was his Cuban bread.

It is an improvement over what I currently had, but still not what I'm looking for.
Don't ask what I'm looking for, because I don't I know.
I think when tasting it, I need to envision how it will work with the Cuban Sandwich.
That thread about Cuban sandwiches has me drooling for one.

Baked at 400 for about 17 minutes 'til IT reached 195.

It is a very good bread, I will make it again.

Had to take some pulled pork and swiss cheese out of the freezer. Already have some ham in the fridge.
Tomorrow will be ultimate test by making the sandwich.
Maybe marrying the ingredients with the bread will give me what I'm looking for. We'll see.

Looks like a nice roll. I've never had true Cuban bread. So no help there. Not a lot of Cubans this far North.

Point for sure.

damn fine looking bread. I don't bake(mental block) but luckily down here in N Cuba (Miami-ish)
there's no shortage of Cuban rolls.

That looks great. Bread is my next maybe rabbit hole. From what I’ve seen and read, a good French roll recipe works well just sub in lard.

Made the sandwich today.

Had to do some substitutions.
Had ham, but thicker than I would have liked.
Used pulled pork instead of thin sliced marinated pork.
Only had long pickle slices, so had to cut them up a bit.
Used Spicy Brown Mustard.
And put a couple slices of Swiss cheese on it.

Do you have a mandolin and steady hands?
I take whole pickles and slice them lengthwise on a mandolin for sandwich slices. I think they sell the long slices in the stores, but whole pickles can be made into any slice you desire with a mandolin or a knife. Only one jar in the fridge.

Actually have 2 mandolin slicers, but the only pickles in the house were the long slices.
Pickles are on the shopping list now though. haha
