If I were to smoke my chicken around 325 F, would that give them a crispy skin, w/o having to finish by grilling them or something?

Yes it would!  Gotta be careful not to overcook at that temp though.  I usually smoke 'em between 275 and 300.

Real easy way to do this is to smoke it low and slow, then toss it the oven under a broiler for a few minutes on a sheet pan. Quick and easy!

For us, we just grill them?
