Working on cleaning out the freezer of venison and made up some of these gems! Not sure if my overall temp was too high or the probes read off, bur way overdone than I wanted! Probes read 125 when I pulled them off, but seemed well over that once I cut into them! Still tasted ok. But the age of the deer and the "doneness" didn't do me any favors! Paired with some unyuns and a few stuffed peppers from the freezer!
