I've owned my Dry Ager UX 500 for about a year now but haven't done anything other than typical steaks, chicken, etc. Did dry age my turkey for Thanksgiving. Sourcing proteins is a challenge. Where do you find fresh Berkshire Pork coppas? It looks delicious and I would love to get something like this going in my Dry Ager. Thanks for posting!
