I haver binkman vertical water smoker.. this will be my first smoke of the spring and I am going to nix the water pan and fill it with lava rock, in hopes that it will make that bad boy burn faster. I already did mods to my charcoal pan.  Which brings me to my question.

Can I smoke with just wood instead of using charcoal in that smoker. My charcoal pan is fairly flat with lots of slits for breathing. What do you guys think?

Personally I think you'd have a very hard time trying to control the temperatures using straight wood.

Plus you may get Nasty white smoke with each addition of wood.
