Gator tail has to be cooked either very low & slow, or very fast. Both ways will be tender, but if you cook it in between it will be rubbery. When we make it we put it in Gumbo, and cook it all day in a crock pot. I have never smoked it, but have fried it. If you do smoke it, I would smoke it in a pan with some broth. Keep the temp around 225, and cook until tender.
