So my parents wanted to make pulled pork and I told them I’d make it but my mom already got what’s called pork ribeye. Will that work for pulled pork? Never seen it before

that's the rib end of the porkloin, you can smoke it but not sure if it will pull apart like the butt will, you might have to chop it up with a knive, but it will taste good. I say go for it.
 
I think I’d steak that and cook to 145. Makes great pork steaks. Probably way too lean to cook to 190F+.
