I have 3 Racks of Pork Ribs to smoke for a party tomorrow. It's going to be 95F outside and the party doesn't start until 5 pm. My ribs normally go for about 5-6 hours. But I was hoping to start early to avoid fire tending in the hot weather that we are having. How long can I let me ribs rest in an ice chest with a towel like a brisket? Would it be best to time my cook to cut down on the rest time?

Never tried to hold ribs. My only advice would be a short hour or so time and keep them together. I even toss an old pillow or two in my cooler for added insulation.

You can smoke them at 270-280 & they will only take about 3 hours.
