I smoked a 7.9 lb. Boston Butt for my wife's co-workers.
I put Jeff's rub on the night before,wrapped and put in fridge.
The next day I put in smoker at 4.00 a.m.,at 225 degrees and
smoked it with Hickory.
Spritzed every hour with apple juice.Took butt out when
internal temp reached 170 degrees,time was 2.00 p.m.
Then put in oven set set at 220 degrees until internal
temp. reached 205 degrees,time was 4.00 p.m.
Then wrapped in towel and put in cooler for 2 hrs.
Took out of cooler at 6.00 p.m. and pulled roast.
Of course had to make a batch of Dutch's baked beans
to go with the pulled pork.
I'll know later today how everyone liked it by how many
leftovers my wife brings home.
