I love pulled pork and I love Enchiladas. Pulled pork enchiladas had to be made.
The ingredients are:
1 tablespoon Oil
1/2 cup Onion fine chop
1 clove Garlic finely chopped
1 tablespoon plus one teaspoon Chili powder
1/2 teaspoon Ground coriander
1/2 teaspoon Oregano
1/4 teaspoon Cumin
1/4 teaspoon Salt
1/4 teaspoon Pepper
2 1/2 cups chopped fresh, canned or frozen tomatoes
2 tablespoon Lime juice
1 pound pulled pork
1 tablespoon Oil
3/4 cup Pepper colour of your choice, sliced
1 small Jalapeno pepper fine chop
1/2 cup Water
6 tortillas 8 inch diameter
1 3/4 cup Old cheddar cheese grated
I put the seasoning, onion and garlic on a plate.
I preheated a fry pan with the oil in it and cooked the onions until they were soft and the spices were fragrant, about 3 minutes. I added the tomatoes and lime juice. I brought it to a boil and then turned to a simmer. Simmer for 15 minutes uncovered. Set the tomato sauce aside and clean the fry pan.
Put the oil in the fry pan and saute the pepper and jalapeno pepper until just soft.
Add the peppers to the pulled pork. Deglaze the pan with the water and add it to the tomato sauce.
Add 3/4 cup of the cheddar to the pork.
Put a thin layer of sauce over the bottom of a casserole pan.
Take a tortilla and spread a spoonful of sauce on it.
Add 1/6 of the pork mixture.
Roll up and put in the casserole. Repeat with the remaining 5 tortillas.
Spread the remaining sauce over the enchiladas.
Cover it with foil and put it in a 375 F oven for 30 minutes.
Take the foil off and sprinkle the cheese over the enchiladas.
Put it back in the oven for 10 minutes.
The Verdict
Absolutely delicious. Ooey, gooey good with a great taste from the smoked pulled pork. I've found a new favourite.
