Pork Belly Burnt Ends and Peach Beans

Had a get together with some friends last night and they asked me to cook. So I wanted to bring something different besides the usual pork butts, ribs or chicken.

Started with a 4lb pork belly and trimmed up the top a bit. Left the bottom alone.

Cubed it up after that and tossed in some rub. I used Mississippi Grind. If you havent tried that I suggest ordering.

While I was letting the rub set in I mixed up some "Peach Beans" heres the recipe:

I substituted country ham pieces in place of the bacon.

And on to the smoker it all went. Ran it about 240.

I let the fat from the belly drip on the beans.

3hrs later I pulled the burnt ends and put them in a pan to glaze.

Glaze consisted of bbq sauce, honey, brown sugar, butter and some hot sauce.

Back on the smoker they went covered in the pan for about another hour.

4hrs total and pulled the burnt ends and peach beans off the smoker.

Were 6 of us and not a scrap of food left. We had too many beers so no plated shot but we also had tater salad and cole slaw. Friends tore the pbbe up like maniacs and ate the entire gallon+ of peach beans.

Also thanks for the heads up on the peach beans. I totally missed those!
 
All looks fantastic! I put the peach beans on my list of things to do just the other day. Cant wait to give them a shot. Great job!
 
Damn that all looks good!! Great job Jake. Sadly, as many things as I've cooked, I've never done PBBE's. I need to get off my lazy but and get a round of them up and running. I see all sorts of posts but never done it. Maybe I could blame it on Tracy because she always wants me to something different.....
