Evening fellas, non fellas and those of you who can no longer swim in the International Swimming League.

In celebration of Juneteenth decided to smoke up some spare ribs my brother in law sent me from home place pastures in Mississippi.

Rubbed up with some of tx smoker tx smoker pork rub

Had a wonderful piece of flap meat that I put on for a snack. These went on the smoke running pecan at 240°

They were small at about 3lbs total so I was sceptical and ready to write a negative review from the start. This was an hour in. At that point I started mopping with this thin vinegar/moonshine sauce. Continued that every hour

About 5 hours in they are looking scrumptious

Sometime after that threw some cheddar/ jalapeno kielbasa on for some smoke

After almost 6 hours everything was done

Nice smoke ring. I was initially disappointed in the thickness of these ribs but let me tell you what. The best spare rib I've had hands down.

"those of you who can no longer swim in the international swimming league" was LOL funny.
I am surprised they took 6 hours that thin. I think sometimes thin ribs come out the best as opposed to those that have too much extra meat that end up tasting more like a chop. Nice work on those!
Thanks bud it was closer to 5.5hr. No wrap. Final outcome was absolutely no fat, juicy and good bite. Not your typical spare rib for sure. Hope you and the fam had a wonderful Juneteenth!
 
Wow! Killer ribs! I’d eat those all day! Great work! I’m interested in that moonshine mopping sauce, may have to look it up. Those cheddar jalapeño kielbasa sounds real tasty too!

one thing I am finding on grass fed pork is the ribs and bacon are on the thin side so Ive been leaving the bacon on the ribs and end up with a nice rack of ribs for the smoker

Thanks Jed. The mopping sauce is from Kroger. It's awesome, tangy, boozy, a little heat. But thin like water so you can use it throughout the cook without burning. Sausage is bomb

Hell, I couldn’t swim with my international family for years. I don’t know what all the fuss is about.

Ribs look good! Like the moonshine mop! My sister probably would drink it from the bottle.
She was always the wild one.

If there are ribs , I'm in . And those look great. Did you run the whole smoke at 240deg.
And the sausage sounds good also.

Nice plate Jake, is the dipping dish just more of the Shine mop.

Thanks David. Ran that temp the entire time. Yes the little bowl is some mop sauce for the fries and put a splash on my slaw
