 I use this recipe for Talipia, Bluegills, Rock Bass, Crappie, Perch, or any other sunfish...

 Combine an egg with 1/3 cup of sweet milk. 

 Mix 1/4 cup of flour with 3/4 cup of white corn meal

 Sprinkle in a teaspoon of old bay seasoning and a pinch of ground black pepper into flour/corn meal mixture.

 Dunk fish filets in egg mixture and then dredge into powder. 

Fry Filets in oil in cast iron skillet on medium head and fish becomes browned and crispy.

That's about exactly what I use & do, but I use regular milk.

I have a little trouble with the coating coming off though.

Yeah, probably pretty Universal. Sweet Milk??.....dunno about that. I use buttermilk on any dipping...fish, chicken, finger steaks, tenders etc...always a good coat for sticking. Bear, maybe try a dry dredge first, then a wet dip, then dry dredge again. let set about an hour if possible..in fridge or out to dry on some.....Willie
