So as many of you know.. I am a total newbie.. and I think I've had great luck so far.. with many many thanks to you old pros in here..

So far I've done a great pork shoulder.. featherbones (riblets as non-Nebraskans know them).. turkey legs.. and beer can chickens...

I think I"m ready for more of a challenge.
I was thinking of a 10 hour smoked beef brisket.. That's what I always have when I hit the Q joints here in town.

I've decided to let y'all decide what I should do next. Anyone wanna place their votes?

Go for the beef! and give the bird a rest

I've been smokin' a couple of years and I've done beef but a brisket I have'nt.That's my vote and if yours is good I want details so I can copy!LOL good luck on either and I'm sure with your attitude you'll "smoke it!"

P.S. A good luck pig like in my avatar don't hurt none neither(but don't tell these pro's they ain't got one yet)

I tried my first brisket a couple weeks ago. I read up a lot on the subject and was scared a bit cause I was having a house full of people for the first try. Sear vs don't sear? I went with not. Overcooked a bit for the "perfect" medium, but the flavor was outsranding. Just used a store bought Montreal rub that has been taking space in my spice cabinet and smoked it in a pan, fat side down (didi not score the fat).

I say go for the BEEF - you'll love it!

Go for the brisket. I smoke over 200 lbs a week and there is nothing like it when done well. Keep an even temp and remember "low and slow is the way to go".

Good Luck,

Joe

If you haven't done a fatty or ABTs or meatloaf yet, I would suggest that you give those a try soon. They're really hard to mess up and once you get started on any of them, they will be a regular item in your smokes.

If you're going to do a brisket, don't plan on company the first time. That way if it doesn't come out like you want it's just the family that gets to eat your mistakes.

If the brisket wins out I would go over to the Beef fourn and check ot the post by Dutch " Basic brisket cook". It wil get you off on the right foot. There also is Smokey Okie's Seared brisket, do a search for that.

By the way, I vote brisket with Q-View.
