Well I just started the 2 hours in foil part of the 2-2-1. They looked a little dry after the first 2 hours but no bad. I can't get the temp below about 240 in the pit. It's a Masterbuilt 20050611 upright gasser. It's about 65 outside today so I thought it would go lower but I guess I'll just shorten my cooking time. Question, do they moisten up in the foil?
