Hello all and thanks for the add! I'm an inspiring young smoker, eager to learn and better myself. I am just a backyard smoker for friends in family, I have never competed/attended any competitions. I love just about all styles of BBQ, I am originally from MO so I am a huge fan of the KC sweet BBQ.
I got into smoking right around a year ago with my neighbor before he moved. We would sit around on the weekends all day drinking beer tinkering around with stuff, one day we cooked some chicken and it went from there. Neither of us had any real grill/smoker experience but have always loved BBQ and cooking outdoors. Until my kids get older to help out and keep company I am trying to talk my wife into getting into it more but its a chore! Shes a brownie/cake/cookie baker and wants to keep it at that.
After chicken we went to pork butts and then it really started. Now its all I want to do every chance I get! I would love to cook more often, I am currently an active duty Marine stationed in NC and when I retire from the Marine Corps in the next 12 years or so, I want to open a small BBQ catering gig to keep me busy and some day long down the road get into competing.
In the short amount of time I have had a few different types of smokers, pretty much what I could find cheap on craigslist. Ive had an Oklahoma Joe offset, 22in WSM, chargriller DUO and most recent purchase is the 36in Assassin grill/smoker. The only two smokers I have now is my WSM (which I have converted to a pellet burner, but it just isn't the same experience/taste so it is going up for sale) and the Assassin, I would love to get the Assassin 24 which is a gravity fed insulated smoker but that is way out of my budget right now!
I am new and I bring little to nothing to the table but I love to read post and learn new things! The thing I am trying to learn the most is about the different cuts of meat, how to trim, what sections require more attention, etc. You can only learn so much reading, you learn the most by doing it! Which is great, except for it is an expensive hobby and I would hate to mess up a $50 brisket!
I have never made my own rubs or own sauces, I am way more basic than that lol. Thanks again for the add, looking forward to being apart of the forum.
