Hello Everyone, My name is Ron and just started smoking with an "official" smoker a couple months ago. I did my research and modded my Brinkman TMLE before I even seasoned & smoked with it. I am getting it down pretty well however sometimes I have a problem getting my temp up to 250. If I stack the lump coal like a half hill in the fire cage I made seems to be more consistent. When I started adding chopped wood into the mix I really started to create more heat. I would love to be more confident in getting my heat up to the temp I like. I have no problem getting it to 175 but I do not want to make jerky the whole time lol. It seems if the smoke is white, its going to taste too smokey. Wind is a HUGE factor for me, I live on a lake and always get a decent wind. Any tips would be appreciated and I have some pics below of the smokes I have completed so far w/mod pics.
