Well you get the picture if you can do it to to something you put on a plate to eat then someone here has probably done it. If you don't find the answer there then just post it and someone will chime in with there opinion on the subject. As far as smoking in the winter I do it all year long! The main thing is you have to learn the diffrence the weather makes on your pit! Also you need to think about some way to monitor your pit from inside the house, think Maveric 732 or 733 remote, it will get old very quicly if you have to be outside for extended periods in realy cold weather! As long as your pit will reach temp. in cold weather, some use welding blankets to help, you should be good to go!
