I have been smoking now for 3 years on a brinkmann 30 inch vertical propane smoker, great for starters, but I'm ready for more of a challenge. I've been looking into offset smokers, price range 300-400, and tips or suggestions would be great
 
Those are defently what I'm looking for. On a smoker like those you start the fire with charcoal then put the wood on top of the coal ?
 
Kind of.  Stick burners are kind of finicky, and you have to get used to the smoker because they all seem to be different.  (from what I've read)

You need to buy one and practice practice practice!!
