Well, it's a bittter-sweet day. This will probably be my last smoke in my first house, so I want to preserve the memories.
I had this house built when I was in my 20's, and I've lived here for almost 3 decades. My neighbors are going on vacation...leaving tomorrow, so I want to do some spare ribs. I did some recently and took a few over to their house, but the husband ate all the bark before his wife got home, and I want to make sure his wife gets some this time!
The sweet part is that the house we're moving into has an outdoor picnic pavillion (among other outdoor amenities): my WSM and grills will have a nice home! And...I'll only be a few miles away: still in the same zip code.
So, on to the ribs. Got the ribs from my local meat market again: they do all the prep work before they package them, making my job easy! I rubbed them with mustard, and made the sweet dry rub that I listed in TwoBeanBBQ's post:

This time, I remembered the pepper! Here they are all rubbed down. They're wrapped in plastic and sitting in the fridge while I get the WSM ready (sorry that the focus isn't that good).
