That's a pretty broad question.
Personally I have never done competition, next year i plan to start but there are many members who have and know from experience what is required.
At the very least you have to have a great rub, if your meat isn't tasty (rub and perfectly cooked) then you don't stand a chance.
Also noticed a lot of judges don't care for overly sauced meat so your best bet is sticking to a great rub that doesn't require the meat to be sauced.

tow download the BBQFAQ in word format. it is a safe zip file that you can save to your desktop and refer to whenever you want.

the entire thing is very much worth reading, but roughly 20 pages (starting on page 266) are devoted to competition, including preparing for them, presentation, how to set up, how to act around the judges if in a MIM-sanctioned competition, how to do this and how to do that. and what not to do.
