High temp cheese?

just wonderin what would be a high temp cheese. was reading a previous post on smokin fatties and it said to use a high temp cheese so it doesnt melt out. what is a good cheese to use?
 
high temp cheese are not something that you will typically find at a grocery store. You will have to order them from a supply house. The cheese has a higher meling point making it perfect for things like salami fatties etc.

It's great stuff for sausages and fattys. I don't know how they do it but even thrown in the pan doesn't melt it out it just gets soft. It's comming in all kinds now too. It's cut in little cubes so it's ready for whatever you want to do with it.

Throw it in your fatties and sausages, throw it on an omelet, a hand full on your salads, hamburgers, meatloaf, sprinkle a handful over your chilli bowl - it's endless!
