Kinda new at smoking and was wondering how much smoke should I put to my ribs? I use chunks of applewood. Should I fill the box once,twice??????

I use the 3-2-1 method as
stated by NG ...

Apple has a nice flavor,
so it would not hurt at all
for 2 or 3 stokes, depends
how fast your unit
goes through the Wood...
 
You want to keep it thin and blue (although in my MES I don't see much blue). You don't want it billowing or you may get some creosote on it.
 
Thanks for the info ev. I have a vertical smoker ( smokey mountain series) How does one acheive the thin blue line of smoke??? Is it in my venting? wood size? When I first started last year I had smoke going everywhere. LOL Whats the secret? And thanks again I love smoking and I want to master it sooo bad.
