My name is Mark and I have been wanting to get into smoking meats for many years. I have dehydrated many many many pounds of jerky for close to 20 years I think. So last year I bought a smoker and made a few things at the end of the year. This year I bought a half a beef and have made a lot of snack sticks and jerky. I've smoked about all of the short ribs and am looking to doing the brisket before the snow flies. Summer sausage is also in my sights for near projects. I'll peek around a bit and if I find an equipment thread I'll post what I have otherwise I might come back here and list it. But I have just bought a little larger smoker so I guess I'm hooked. I'll through my 2 bits in when I can.
