My hometown is Topeka but I'm here in Galena for a couple more years then its back home. I am a very accomplished amateur cook since the age of 8. I started dutch oven cooking over 25 years ago cooking at home in the backyard, also a camp cook for living history reenactments and for the past 10 years for the Boy Scouts. My forte is in cured, smoked meats and sausages. I am one my 3rd Brinkman charcoal grill/smoker and I have a GOSM. I have some professional background having worked for the Burlingame Locker Company in Burlingame Kansas. We smoked bacon and ham at Thanksgiving and Christmas smoked turkeys. We made dried beef and jerky. I got some good experience in the art. Some of the meats I make are ham, bacon,jowl,Panchetta,Guanciale,and a variety of sausages fresh, dried and smoked. I have a dry rub and some sausage seasonings I have developed and am working on marketing them.
